Cooking Pancakes

As a child I had to wait until Shrove Tuesday to get pancakes. This was almost as bad as waiting for Christmas. Now I can cook them whenever I please. I have two boys and they both know how to cook pancakes. It's an easy recipe and can be made quickly with a mixer or slowly with a fork and a bowl.

You need one egg for every person, if you make a mix for more than two people add another egg for each time you reach three. This will make approximately three pancakes for each person.

For every egg you need three rounded desert spoons of flour. If using a fork, mix the two together first into a thick paste. Then dilute this with milk until it runs (not slowly drips) off the fork. If using a mixer you can add these three things in all at the same time.

How much milk? It depends on the pancake. On days when I am alone, I make a one thick pancake with very little milk and the mix all goes in the frying pan. This makes a real cake type of pancake and I eat it with jam and a bit of lemon juice.

Normal pancakes are made with enough milk to make it runny so it spreads across the pan and crepes have lots of milk to make them thin and crisp.

Real butter is the best thing to cook them with, a little if you like them dry and a lot if you like them crisp. It should be hot but not overly brown when you ladle the mix in. One ladle will make one pancake. Turn it when it is solid and serve it when it is just right.

Add your flavour and eat straight away. Sugar is nice with juice of an orange, lime or lemon. Maple syrup is popular, and jam syrup and some people like ice cream.

Pancakes are good for breakfast, lunch or dinner but not on the same day. They are great when you forget to take something out of the freezer. They are fantastic when you are sick of meat. They are awesome made in a French Restaurant with flaming spirits.

A food designed for children, with their high milk content and sweet flavour, they are also a great comfort food on bad days, a treat, a joy, and a chance to have the whole family talking together, sharing the standing around the fry pan with sticky fingers.
